Black Bean Brownies (adapted from Chocolate Covered Katie) 
Truthfully? Wow. Just wow. I haven’t had a good, fudgey brownie in yonks because I know it’s swimming in butter and white sugar and all the things that aren’t good for you and make your waistline bulge. Except this one. I’m still reeling from shock at how something can be so simultaneously decadent AND healthy at the same time. 
For ages, I’ve had my eye on Chocolate Covered Katie’s black bean brownies, and I decided today was the day. I made mine in a blender whereas they apparently work best in a food processor, but it was good nonetheless. I gave them to my housemate without saying anything, and her verdict was that they were a great brownie! Just a great brownie, not even a great healthy brownie. She had no clue it was made from black beans! The healthy bit is just the metaphorical icing on the top.
Ingredients
1 400g can of black beans, drained. 
2 tbsp of Dutch cocoa powder
1/2 cup quick oats
1/4 cup Chocolate Coconut Butter 
1/4 cup honey
2 tsp pure vanilla bean paste
1/2 tsp baking powder
1/4 tsp sea salt
2/3 cup milk chocolate chips 
Instructions
 Preheat oven to 180 degrees Celcius. 
Blend all ingredients aside from chocolate chips together.
Add chocolate chips. 
Pour mixture into prepared pan
Bake for 15-20 minutes, and cool for extra 10 minutes (try your very best!) before cutting. 
Enjoy!!

  3. So i’ve been meaning to get back on chefjackie for a while but I guess I was too lazy to log out of my other tumblr… Anyways, let’s start this off right with good ol’ breakfast! 
Watching and growing up with disney channel shows and movies I would always see the typical suburbian family eating brekafast together at the breakfast table. With the mom setting up the table with hearty plates of food and the kids pouring freshly squeezed orange juice in their cups. Reality is, I never got that in my household considering my mom would have trouble waking up early and my dad being too busy getting ready for work. So growing up watching families eat that hearty meal each morning made me really want to experience that. I call it “white people breakfast”. Luckily when I went to Memphis and stayed over my friends house (yeah she was white) I got what I always wanted! 
Pictured above is eggs benedict. Its poached egg over toast with some cheese sauce over it. The traditional way for eggs benedict is that you’re supposed to use Hollandaise sauce over it but even with the cheese sauce it was great. Oh and might I add the juicy thick cut slice of ham right next to it. Waking up to the smell of fresh hot toast with hearing the sizzle of the pan from the ham, nothing gets better than that.

  5. Sorry I haven’t been on tumblr for so long. Most of my classes won’t let me use my laptop so you know what that means… Anyways being in st. Louis im sure that everyone assumes that i’ve eaten the ribs here. Actually thats not true, even though in restaurants they serve what they call “st.louis ribs” people here haven’t even heard of them before. So I guess it’s one of those stereotypical things. However, there is a pretty famous BBQ restaurant here called Pappy’s BBQ. I guess the restaurant appeared in many t.v shows and won a lot of competitions, and all I can say is that they live up to their reputation. I’ve never tried the ribs but I heard they’re phenomenal. I’ve had their pull pork sandwich/plate a couple of times and it’s delicious. Their meat is just so tender and juicy. You don’t even need their bbq sauce to enjoy this dish (although its recommended). For anyone that’s planning a future trip to St. Louis, screw the Arch (j.k you should go there too) Pappy’s should be the number one destination.

  6. Oh and let me update on what I get at school. You know when you’re thirsty but water just doesn’t satisfy your thirst so you want like soda or juice or something? WELL I always get Honest tea to satisfy my needs… Sometimes sweet tea or flavored tea is to sweet and it takes away the natural tea taste. And it’s just like, why bother getting tea then? why dont you just get juice?! Am I right? BUT this tea has the perfect sweet peach taste and it still tastes like tea. I believe the calories in this bottle is really low! and the sugar is low too so basically overall it’s a healthy beverage. Even though this might be pricey, I think it’s worth it.

  7. Yea i’m back. I haven’t really been craving a lot of food items recently so I haven’t updated a lot. My bad. BUT! I HAVE BEEN CRAVING A REAL BREAKFAST BURRITO. Yea sure they have some at school but let’s face it. IT’S WHATEVER. They don’t satisfy my appetite. BUT THIS (pictured) DOES! What I have shown is a Kogi breakfast burrito… It’s sweet and savory. I like to get the spicy pork but the beef is good too. If not kogi, then any other breakfast burrito from a mexican restaurant in California will do because they’re most likely going to be HUMONGOUS. Theres this small restaurant in Diamond Bar called International Burgers. It’s sort of by the other side of DB near Lorbeer behind Carl’s Jr. THOSE BURRITOS ARE SOOOOOO GOOOOOD… omg… AND THEN YOU PUT HOT SAUCE ON IT… ok I should stop right here before I get even more hungry.

Vivian thuting To’s birthday was just last week. Nikki Reginaldo’s in in 5 days. Evelyn Chia’s is in two weeks with Judy Hwang’s… RIDICULOUS I TELL YOU! Too bad i wont be there to celebrate with you guys. For all of them have turned or is going to turn 18. :) 
Oh and the above pictures is this hello kitty cake that i thought was cute. I’m not sure what it is. Maybe chocolate. Or maybe its that light fluffy asian type cake that my mom swears is better than american cake. Might I add that american cake is like 203894938x sweeter than asian cake. All of those who tried both, you know what im talking about…
